Shahi Mutton Biryani Recipe

Ingredients:

  • 2 cups Basmati rice
  • 500g mutton, cleaned and cut into pieces
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 2-3 green chilies, slit
  • Whole spices (1 bay leaf, 4-5 cloves, 2-3 green cardamom pods, 1-inch cinnamon stick)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 3 tablespoons ghee
  • 3 tablespoons vegetable oil

Instructions:

  1. Wash and soak Basmati rice for 30 minutes. Drain and set aside.
  2. Heat ghee and oil in a large, heavy-bottomed pan. Add whole spices and sauté for a minute.
  3. Add sliced onions and cook until golden brown.
  4. Now, add ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
  5. Add mutton pieces, turmeric powder, red chili powder, and salt. Cook until mutton changes color.
  6. Stir in tomatoes and cook until they turn soft.
  7. Reduce the flame and add yogurt. Cook for 5-7 minutes until the oil separates.
  8. Now, add mint and coriander leaves, green chilies, and garam masala. Mix well.
  9. Add the soaked and drained rice to the mutton mixture. Stir gently.
  10. Add 4 cups of water, cover, and cook on low heat until the rice is tender and cooked through.
  11. Once cooked, let it rest for 10 minutes, fluff with a fork, and serve hot.
